Aperol Spritz Pops are ice pops inspired by the Aperol Spritz cocktail. The light and refreshing pops are made with the same ingredients as the classic drink: Aperol, prosecco, and club soda, with the addition of fresh orange juice.
Since an Aperol Spritz has a relatively low ABV (alcohol by volume) compared to a more spirit-forward drink, it is a relatively easy recipe to translate to a frozen treat since they freeze more easily compared to something with a higher standard ABV.

Prosecco, which has fruity flavors like apple and citrus, offers a light flavor profile that blends well with the bittersweet Aperol. While any sparkling wine would technically work here, it is best to stay away from wines that have yeasty notes like Champagne.
Due to the alcohol, these pops will freeze to an icy consistency that is easy to bite through. For the best results, freeze for at least 12 hours before enjoying.
