Calabrian Chile Chicken Enchiladas Recipe

Store-bought enchilada sauce gets an unexpected upgrade thanks to a generous amount of chopped Calabrian chiles. Hailing from the Calabria region in Italy (the toe of the boot), this type of chile is beloved for its bright, slightly smoky flavor and moderate heat. Mixed with enchilada sauce, shredded rotisserie chicken, cream cheese, and Monterey Jack cheese, it makes for a supremely satisfying enchilada filling. This recipe calls for flour tortillas, which are pliable and easy to work with, but feel free to swap in corn tortillas for a nod at traditional enchiladas and a gluten-free option.
