Hugo Spritz Pops are a frozen ice pop inspired by the Hugo Spritz cocktail. The pops feature the key ingredients in a traditional Hugo Spritz — elderflower liqueur and Prosecco — and incorporate the drink’s garnish to retail the original’s hit of mint and lemon.

A Hugo Spritz is a lightly sweet, floral, and citrusy cocktail made simply by combining an elderflower liqueur (we like St. Germain) with Prosecco and club soda. The drink is traditionally garnished with a slice of lemon and fresh mint. In this recipe, lemon juice and fresh mint are added directly into the pop mix to bring a pop of freshness into every bite.

Since a Hugo Spritz has a relatively low ABV (alcohol by volume) compared to a more spirit-forward drink, it is a relatively easy recipe to translate to a frozen treat since they freeze more easily compared to something with a higher standard ABV. These pops are around 8% ABV (alcohol by volume) which yields a frozen pop that is soft enough to bite through with ease.

Tips for making Hugo Spritz Pops

The sweetness of the elderflower liqueur is tempered by the citrusy Prosecco and fresh lemon juice. For best results, strain out any pulp from the lemon juice before adding it to the cocktail mix — the pulp can clump when freezing and alter the texture of the frozen pops.

Due to the alcohol, these pops will freeze to an icy consistency that is easy to bite through. For the best results, freeze for at least 12 hours before enjoying.
