I’ll be frank: I didn’t believe this pan would stack up to the internet fanfare when I first heard of it. Nonstick without any coating? Impossible, I thought. The closest no-coat nonstick experience I’d ever known was with cast iron skillets, which can become virtually nonstick after years of use and seasoning. Stainless steel pans can be nonstick, too, but they have to be properly preheated. The Our Place Titanium Always Pan Pro promises nonstick cooking without the need for any special seasoning or preheating — just turn on the stove and go. Would it really work? I was pleasantly surprised to find that it excels at nonstick cooking: I scrambled eggs mess-free and released dumplings beautifully from its titanium interior.

I was skeptical when I got my hands on a sample of this pan. Its new-fangled design — a hexagonal pattern imprinted onto the cooking surface — reminded me of another brand (HexClad, anyone?) that’s well-known for its hybrid stainless steel and ceramic cookware. However, what sets it apart is that the Titanium Always Pan Pro doesn’t have any coating on it whatsoever. I’ve been trying to avoid Teflon-coated cookware for years now, and hadn’t found a ceramic pan that lasts for very long before the coating starts to chip off.

Upon its first use, the pan already impressed me. I experimented with the most basic yet universal food that relies on a nonstick surface: fried eggs. I waited for the moment when I’d try to flip the egg, only to have it stick and cause a mess, but that moment never came. The egg released without a hitch.
The imprinted pattern, inspired by the water-repellent properties of lotus leaves, creates a nonstick experience without the need for toxic chemicals. Essentially, the many tiny divots on the cooking surface created by the pressed pattern help to smoothly release foods. I was especially flabbergasted when I used the pan for potstickers, a food named after its hallmark trait of, well, sticking to pots. They came away evenly browned and crispy on the bottom — not a single tear in sight.

The skillet itself has an aluminum core, a stainless steel exterior, and a durable titanium interior. Together, these three layers conduct heat incredibly well to sear proteins and vegetables alike. It’s available in 8.5-, 10.5-, and 12.5-inch diameters. While testing this pan, I especially appreciated its tall sides, which promote easy stirring for the many fried noodles and Japanese curries I cooked in it. Since receiving this pan for testing nearly five months ago, it’s become a daily driver in my kitchen. I never — ever — thought I would find a nonstick pan without a coating of some kind, be it Teflon or ceramic, but the Our Place Titanium Always Pro really does the trick. For the first time since its release, you can grab it on sale during the Our Place spring sale.
