What Is Sulfur?

“Sulfur is the third most abundant mineral in your body, and while it doesn’t get the spotlight, it’s essential for many of our body’s key processes,” says Sapna Peruvemba, MS, RDN, registered dietitian and founder of Health by Sapna.

One of the most common places you’ll find sulfur in the diet is actually in amino acids—the building blocks of protein. “Sulfur is part of two important amino acids: cysteine and methionine,” Peruvemba confirms. It’s also found in amino acids homocysteine and taurine, and needed to make glutathione, a powerful antioxidant.

“Additionally, sulfur is a key component of three vitamins: thiamin (vitamin B1), biotin (vitamin B7), and pantothenic acid (vitamin B5),” Peruvemba shares. These B vitamins are crucial for healthy metabolism, growth, repair, development, hormone function, immunity, and hair, skin, and nail health.

“Both animal and plant-based proteins can be abundant sources of sulfur,” says Bonnie Newlin, MPA, RD, CDN, CLT, registered dietitian and founder of Crave Nourishment. However, you’ll also find sulfur in a handful of medications, like antibiotics and pain relievers, as well as supplements including joint supplements methylsulfonylmethane (MSM), glucosamine sulfate, and chondroitin sulfate.

Sulfur Benefits

Because of sulfur’s presence in an array of essential nutrients, the mineral benefits the body in a plethora of ways. Here are the highlights:

  • Builds protein: As an element of a handful of amino acids, sulfur is “essential for protein synthesis,” says Newlin. Many sulfur-rich foods are high in protein for this reason, further encouraging protein gains in the body. Protein is needed to build, repair, and maintain not only muscle, but most every structure you can think of in the body, from organs and cartilage to hair, skin, and nails.
  • Strengthens bones: In this same vein, the protein-building nature of sulfur also makes it supportive of bone health. “It’s a building block for bones, teeth, and connective tissue,” explains Peruvemba.
  • Boosts immune health: “Sulfur is critical for making glutathione—a powerful antioxidant that helps reduce inflammation, prevent cell damage, and fight free radicals,” says Peruvemba. Sulfur’s presence in a range of B vitamins also adds to its immune-boosting benefits. These benefits are so pronounced that sulfur has been found to potentially ward off chronic diseases like heart disease, type 2 diabetes, respiratory illness, kidney disease, and neurological diseases.

8 Sulfur-Rich Foods

When it comes to sulfur, there’s a lot less guidance on how much to eat and where to obtain it compared to other nutrients. “Unlike other nutrients, there’s no established Recommended Dietary Allowance (RDA) for sulfur. That’s because sulfur is widely available in a variety of foods,” says Peruvemba. 

These foods are primarily broken down into protein-based options (since sulfur is a key component in some amino acids) and a range of plant-based foods, thanks to organosulfur compounds found in certain vegetables.

“Adequate protein intake will often provide enough sulfur in the diet,” Newlin emphasizes. That said, we’ve noted some particularly excellent sources of sulfur to help you reap the most benefits from this mineral. Here are eight of the very best sulfur sources:

Legumes

As one of the best sources of amino acid-rich plant-based protein, sulfur is readily found in legumes like beans, peas, and lentils. “Pulses (another name for legumes) are not only rich in plant-based protein, but also full of sulfur,” says Peruvemba. And there’s no shortage of tasty ways to include these fiber-filled foods into your daily routine. “A cozy lentil soup, black bean chili, or dal is perfect for the colder months,” Peruvemba shares.

Poultry

Poultry like chicken, turkey, and duck are all super sources of sulfur. This is thanks to their high amino acid and B vitamin content. “Sulfur is often found in animal-based sources like poultry,” Peruvemba concurs. Poultry is the perfectly delicious sauteed, roasted, stewed, or grilled and added to salads, soups, stir fries, or pizza.

“Sulfur is also present in organosulfur compounds found in specific vegetables, particularly those in the allium family,” shares Peruvemba. The most classic alliums include garlic, onions, chives, scallions, shallots, and leeks—crucial flavoring agents in a range of culinary cuisines. These ingredients are also famously known for modulating the immune system and reducing inflammation. “An easy way to get sulfur into your diet is by snacking on hummus. Both chickpeas and garlic contain the mineral,” says Newlin.

As yet another major source of amino acids and B vitamins, fish is also packed with sulfur. Some of the highest-sulfur seafoods include tuna, salmon, halibut, and mackerel. These options also offer a healthy dose of anti-inflammatory omega-3 fatty acids—further bolstering your immune response. These flavorful fish are delicious marinated and seared, added to hearty stews, made into cold salads for sandwiches, or even in sushi.

In addition to sulfur, eggs are also fantastic sources of protein, phosphorus, selenium, choline, vitamin A, and a range of B vitamins to support immune, bone, eye, and metabolic health. Whether fried, scrambled, poached, made into an omelette, or added to fried rice, there’s no shortage of ways to enjoy eggs.

Cruciferous Veggies

Cruciferous veggies are another major organosulfur compound-containing food group. Broccoli, cabbage, cauliflower, Brussels sprouts, and kale all fit within this category of veggies that are full of gut and heart health-boosting fiber, antioxidant-rich plant compounds, and immune-boosting iron, zinc, selenium, vitamin A, and vitamin C. One of Peruvemba’s favorite ways to enjoy these veggies is roasted. “Think roasted cauliflower or cabbage steaks drizzled with a creamy tahini dressing. And the final sources of sulfur in this round-up are dairy options like milk, cheese, yogurt, and kefir. Not only are these foods high in sulfur-containing amino acids and B vitamin content, they also offer bone-strengthening calcium, phosphorus, and vitamin D. If not enjoyed on their own, dairy foods are delicious in smoothies, puddings, sauces, pastas, dips, and baked goods. For optimal health benefits, look for fermented dairy products, like cottage cheese, yogurt, or kefir, as they contain gut health-supportive probiotics.

Sulfur Side Effects

Overall, there are very few side effects of dietary sulfur, as it’s a tough nutrient to over consume through whole foods. However, sulfur overconsumption is possible when taking sulfur-rich medications or supplements, so be sure to speak with your healthcare provider prior to starting these. 

Overdoing it with sulfur through supplements, medications, or (less commonly) excessive processed meat intake can result in gastrointestinal (GI) symptoms like diarrhea or inflammation of the colon (also known as colitis). This is because overabundance of the mineral can feed unwanted bacteria in the gut microbiome, which is why some folks with specific GI issues like small intestine bacterial overgrowth (SIBO) may be directed to follow a low-sulfur diet for symptom management

“The bottom line is, if you’re eating a balanced diet that includes plenty of protein and vegetables, you’re set when it comes to sulfur. However, it’s worth appreciating this mineral for all the behind-the-scenes work it does to keep you healthy,” concludes Peruvemba.
