Corelle Vitrelle Pasta Bowl Review

Pasta bowls aren’t new. But eating main courses from bowls — regardless of the time of day or formality of the table setting — has become so standard that it’s largely escaped the mockery typically accompanying the mass proliferation of a fad. Maybe it’s been more widely accepted because it crept in quietly, starting with salads at chic fast casuals a decade ago. Perhaps it’s the slow-burn aftermath of the 2017 Buddha Bowl craze. Or, maybe it’s because a lot of foods are just easier to eat from a wide, shallow bowl.

Chef Joe Isidori, who introduced CrazyShakes to the US in 2015, knows a thing or two about trends. Though his OTT odes to ice cream are notable in their own right, Isidori also has a Michelin star and a cookbook, and he led the global expansion of Black Tap|Craft & Burgers. Today, he operates Arthur & Sons New York Italian, a comfy joint with a menu and vibe that pays homage to the 90s.

A third-generation New York chef with Italian roots, Isadori has some opinions about pasta bowls. At Arthur & Sons, he’s serving up heaping portions of favorites like gently fried calamari, meatballs in ricotta, half a dozen “macaroni” dishes, and all the cutlets. When asked for a pasta bowl recommendation, without hesitation, Isadori suggested a bowl we least expected: the classic Corelle Vitrelle 20-ounce pasta bowl in Winter Frost White.

Corelle, known perhaps most famously for its dishes patterned in 70s hues such as “Butterfly Gold,” “Blossom Green,” and “Woodland Brown,” was Nona’s favorite set of dishes for the same reason it is Isadori’s: practicality. 

“Everything old is new again,” says the outspoken chef. “I love the feel of it, and of course, it reminds me of when I was growing up. But the real reason I like this bowl is that it’s simple, it’s bright white, and it lets the food speak for itself. Corelle’s Vitrelle pasta bowls are perfect for everyday dining at home.”

Patented by Corelle in 1970, Vitrelle is a process where three layers of glass are compressed into a thin, lightweight, shatterproof, and scratch-resistant material. Corelle turned this material into its signature dishes, which grew in popularity for their durability and ability to endure microwaves and dishwashers.
